Air-fried Spanish Mackerel with Spices and Rice

Mackerel fillet, Cleaned |

Banana leaves, *Cleaned and soften |
1 piece |
Aluminum foil, 20-30 cm long |
2 cups (200 g) |
Cooked brown rice |
6 pieces (50g) |
Lettuce |

Method:
- Combine all ingredients A (blended ingredients, curry powder, turmeric powder, tamarind paste, kaffir lime leaves, and salt) in a bowl and mix well.
- Cut and clean a piece of banana leaf around 8 inches. Place on an aluminum foil.
- Preheat Air-fryer at 200-degree celcius for 3 minutes.
- Layer half of ingredients A on the banana leaf, put fish fillets, and top with the rest of ingredients A.
- Fold the aluminum foil neatly and cook in the Air fryer at 200-degree celcius for 25 minutes.
- Serve with cooked brown rice, lettuce, and lime for extra taste.
*Tips: Soften banana leaves by holding them directly on top of a burner, moving them slowly to heat until the whole leaf becomes glossy.
